Is there a way to customise "Expert type" on an expert card? The list in the drop-down box is fairly limited (and is also not in alphabetical - or any apparent - order, which is unhelpful).

Unfortunately there isn't a way to customise the "Expert type" on the Card. However, I would suggest posting this to our Ideas Hub under Feedback and Ideas tab for greater discussion and consideration amongst other members of the community as well as our Product team.
